Apple Cinnamon Muffin Recipe

This muffin recipe has come to my rescue many times! When there is nothing in the house to offer people who drop by or when the kids are looking for a snack, it's easy to make this treat. It is also quite tasty, and I always get asked for the recipe.
These apple muffins are also great to prepare as an activity with small children or for a children's party because they are so easy. Perfect for a baking-themed birthday—just add some sprinkles and icing so the kids can decorate them, too!
Apples and Cinnamon: The Perfect Match
Apples and cinnamon go well together - just think of apple pie!
What makes this recipe so valuable is that many of the ingredients are common staples we often have on hand in our kitchens.
You can use any type of apple in this recipe as most types will bake well and will give the muffins a unique apple flavor. Although some apples do bake better, there is no need to make a special trip to the store to buy a certain type of apple (more on this later).
These muffins pair well with a hot cup of coffee or tea to serve those unexpected guests!
What Type of Apple Is Best for Muffins?
Most types of apples will work well in this recipe. You can use whatever you have on hand especially if you are making them on a whim. There is no need to run out to purchase a specific kind of baking apple.
However, if you are preparing these ahead of time the most recommended apple types for baking (and this includes pies) are MacIntosh and Granny Smith.
The white flesh of the MacIntosh apple softens nicely and the Granny Smith has a nice sharp, tart taste that holds up well when baked. It really depends on the flavor you prefer.
Most apples will taste great when baked although I have noted that the Red Delicious is recommended more as an eating apple than for baking. I have never personally tried the Red Delicious for baking because it has a very distinct flavor that I am not sure transfers well to a baked good.
Recipe for Apple Cinnamon Muffins
This muffin is as delicious as it is simple to prepare with ingredients you likely already have. Enjoy!
Ingredients
- 3/4 cup milk
- 1/2 cup vegetable oil
- 1 egg
- 2 cups all-purpose flour
- 1/3 cup sugar
- 3 tsp baking powder
- 1 tsp salt
- 1 medium apple, pared and chopped
- 1/2 tsp cinnamon
Instructions
- Preheat oven to 400 degrees.
- Grease bottom of 12 medium muffin cups.
- Beat milk, egg, oil, apple and cinnamon together in a bowl.
- Stir in flour, sugar, baking powder and salt.
- Stir just until moistened (mixture will be lumpy).
- Bake until golden brown, approximately 15 minutes.
- Remove immediately from the pan to cool.

Quick Icing for Your Muffins
If you want to fancy up those muffins but don't want to spend too much money or time on it, try this quick icing.
As a child, my mom would just mix up some icing sugar with milk to create a light topping for just about any baked good. There was no measuring involved—she just put icing sugar in a bowl then added and mixed it with the milk until she achieved the consistency she wanted.
This icing can be a little runny and transparent, so it's best to ice the muffin after it has cooled and closer to the time you plan to serve them.
This is also a great activity for the kids. They can easily mix up their own icing and add it to the muffin top themselves. Yum!
