Cooling Summertime Beverages

Sattu is roasted Bengal gram flour, which is made from brown chickpeas. Unlike garbanzo beans, which are white in colour, Bengal gram is brown in colour. They are much smaller than garbanzo beans and are as much a part of Indian cooking as are the white chickpeas. To differentiate between the two, in India, the brown chickpeas are called "chana" while the large white chickpeas are called "chole."

Today, we will be preparing a summer drink with sattu that not only effectively cools the body but also provides a lot of energy because it contains a lot of protein. It's no wonder that sattu is also called a poor man's protein shake.

Bengal gram, and therefore, sattu, is also rich in B-complex vitamins and has substantial amounts of several minerals.

Sattu powder, which is roasted gram flour, is easily available in Indian shops so you can purchase it and make this drink. However, if you do not wish to purchase sattu flour you can buy brown chickpeas and roast them at home. Let them cool down completely, then remove the skins and grind them fine. Sieve out the ground flour before using it.

We are preparing two types of sattu drinks:

  • Sweet sattu drink
  • Salty sattu drink

Ingredients

For the salty sattu drink:

  • 3 tbsp chana sattu (roasted gram flour)
  • 50 ml + 200 ml chilled water
  • 1 tbsp hara dhania (cilantro), finely chopped
  • 1 tbsp onion, finely chopped (optional)
  • 1 tbsp pudina (mint leaves), finely chopped
  • 1/4 tsp kala namak (black salt)
  • 1/4 tsp sendha namak (rock salt), or to taste
  • 1/2 to 1 green chilli, finely chopped
  • 1/2 tsp bhuna jeera (roasted cumin seed powder)
  • 1 lemon, juiced
  • Ice cubes (optional)

For the sweet sattu drink:

  • 3 tbsp chana sattu (roasted gram flour)
  • 50 ml + 200 ml chilled water
  • 1/4 tsp/to taste kala namak (black salt)
  • 2 tsp ground mishri (table sugar)
  • 1 lemon, juiced
  • Ice cubes (optional)

Instructions

  1. To make the salty sattu drink: Put the sattu flour in a mixing bowl. Add about 50 ml of water. Stir until the flour disperses completely.
  2. Add 200 ml chilled water as well as the other ingredients: chopped cilantro, mint, onion, green chilli, roasted cumin seed powder, black salt and rock salt. Stir until all the ingredients are mixed nicely. Add the lemon juice and mix again.
  3. Pour in a glass, add ice if necessary and serve.
  4. To make the sweet sattu drink: Put the sattu flour in a mixing bowl. Add 50 ml of water and stir until the flour disperses well.
  5. Add the black salt and ground mishri (sugar) and lemon juice. Stir until well mixed.
  6. Pour the sattu drink in a glass, add ice if necessary and serve.
