Recipe for Roast Beef Dinner

Learn how to cook roast beef in the oven with fresh vegetables, roasted potatoes and mash. I've included step-by-step instructions to cook everything that goes along with this meal. This makes a wonderful family dinner. The outside of the beef is very well done and crispy, and the inside of the meat is soft and tender.

Serves 4 people

Ingredients

  • Approx 1.3 kg joint of beef
  • 4 medium-sized carrots
  • 12 medium-sized potatoes
  • 8 tablespoons frozen peas
  • 2 tablespoons gravy powder

Instructions

  1. Preheat the oven at the highest mark for ten minutes.
  2. Take the beef joint out of the packet and rinse under the tap.
  3. Add water to a roasting dish, enough to cover a third of the meat.
  4. Place the beef in the dish.
  5. Put in the oven on the top shelf at the highest setting for ten minutes.
  6. Reduce the heat of the oven to 280 degrees and put the roasting dish in the middle part of the oven.
  7. After a further 20 minutes remove the dish from the oven. Turn the meat over to the other side in the dish.
  8. Put enough tin foil on the meat to cover it completely, making sure to pierce it with a knife.
  9. Cook for a further 1 hour and 40 minutes.
  10. Remove from the oven and take off the tin foil. Return to the oven for another 20 minutes.
  11. Remove from the oven and put the roast beef on to a plate to cool.

Carving the Meat

Allow the meat to be cooked and out of the oven at least thirty minutes before you dish up the dinner. This lets the meat juices settle. Then you can carve the beef joint easily.

Roasted Potatoes Recipe

There are numerous ways to cook roast potatoes. This is how I do it. Some people prefer to have large ones so only cut large potatoes in half. Others prefer smaller ones so will cut up the potato into quarters.

You are the cook so you decide.

  1. Peel and cut up 6 of the potatoes to a size you want them to be.
  2. Put them in water and a pot and boil for 15 minutes.
  3. Drain the water from the pot.
  4. Add a small amount of vegetable or sunflower oil to a roasting dish.
  5. Put in the potatoes and turn them around in the oil so that they have been covered in it.
  6. An hour before the dinner is due put the potatoes in the oven above the beef.
  7. They take around an hour depending on how well cooked you want them to be.

Preparing and Cooking Mashed Potatoes

  1. Peel the potatoes and cut them into small pieces. A large potato should be cut in four.
  2. Put them into a saucepan and cover with water.
  3. Boil the water and then simmer for twenty minutes.
  4. Strain the water from the pot.
  5. Add a small knob of butter and mash them.

Once these are prepared and cooking it is time to carve the beef.

Frozen Peas

These only take 10 minutes to cook so time it to coincide with the other vegetables.

  1. Boil the water in the saucepan.
  2. When it is boiling add the frozen peas.
  3. This will cause the water to go off the boil.
  4. Wait until it comes back on the boil again.
  5. Then simmer for twenty minutes.
  6. Strain the water from the pot.

How to Cook Sprouts

  1. Peel the sprouts of the outer leaves.
  2. If they are large cut in half. If small leave them whole.
  3. Put in a saucepan and cover with water.
  4. Boil the water and then simmer for twenty minutes.
  5. Strain the water from the pot.

How to Cook Carrots

  1. Cut off the top and end.
  2. Peel the outer skin from the carrots.
  3. Cut them in half and then slice length ways in four pieces.
  4. Put in a saucepan and cover with water.
  5. Boil the water and then simmer for twenty minutes.
  6. Strain the water from the pot.

Roast Beef and Vegetable Dinner

Carve up the roast beef into slices and add to the plates.

Making the Gravy

  1. Take some of the water that the beef was cooked in and add to a saucepan.
  2. Add the same amount of plain water.
  3. Take a cup or bowl and add some cold water to it. Put in some gravy powder and stir well.
  4. Make sure all the powder has dissolved.
  5. Bring the water to the boil in the saucepan.
  6. Quickly but evenly add the cold water and gravy powder to the saucepan.
  7. Make sure you stir all the time until the gravy is made.
  8. Simmer on the lowest heat for 2 minutes stirring occasionally.

Now everything should be cooked at the same time. You are ready to serve up a delicious home cooked meal.

Yes good old Roast Beef. This is easy to cook because once it is put in the oven it only has to be turned once. So it doesn't take too much looking after while cooking.

This dinner is a favourite of mine and I cook it a lot. Beef is cheap enough over here most times. It also freezes very well which is a bonus.

A lovely roast dinner is always worth taking the time to prepare and cook. I had family over a few months ago and after a few days we decided to have fish and chips from the chippy because we had been out all day. My 7 year old nephew who loves food from the chippy said "oh no are we not having one of your lovely dinners tonight." Lol

Ah Brett that is a shame you have not got access to a proper kitchen. I have often been too poor over the years to have decent dinners so I know how hard it is not to have a proper meat, potatoes and 3 veg dinner sometimes.
