Masala Pav Is a Crowd-Pleasing Snack

We all sometimes crave a healthy yet deliciously savory snack, and masala pav perfectly fits the bill. This snack is super easy and quick to make. Buy ready-made pav buns from the store, make the spicy masala and garnishes ahead of time—and then you'll be ready to assemble and serve any time you wish.

Masala pav is an excellent combination of butter-toasted pav bread; spicy masala filling and topping made with sauteed tomatoes, onions, capsicum, and spices; and garnishes of freshly chopped onions and coriander leaves.

With one or two lemon wedges on the side, it makes a filling and delicious teatime snack, evening snack, or party appetizer.

Ingredients

  • 6 pav buns
  • 1 cup onions, finely chopped
  • 1 cup tomatoes, finely chopped
  • 3/4 cup capsicum, finely chopped
  • 2 tablespoons butter
  • 1 teaspoon cumin seeds
  • 1 teaspoon ginger-garlic paste or minced ginger and garlic
  • 1/8 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 2 teaspoons pav bhaji masala, or to taste
  • 1 teaspoon salt, or to taste
  • 2 tablespoons fresh coriander leaves, finely chopped
  • 1/2 cup water or as needed
  • 6 teaspoons butter (1 teaspoon per pav bun)
  • 6 teaspoons chopped onions (1 teaspoon per pav bun), for garnish
  • 3 teaspoons freshly chopped coriander leaves (1/2 teaspoon per pav bun), for garnish
  • 3 to 6 lemon wedges (1 to 2 per serving)

Instructions

  1. Add 1 tablespoon of butter to a heated deep-bottomed pan. Keeping the pan at medium heat, add cumin seeds. Allow them to crackle. Add ginger-garlic paste and saute for 30 seconds.
  2. Throw in the chopped onions and some salt. Adding salt quickens the cooking. Continue to saute the mixture until the onions become transparent.
  3. Add the chopped tomatoes and chopped capsicum. Increase the heat and saute for 3 minutes or until the tomatoes become mushy. The mixture should be almost dry.
  4. Lower the heat. Add all of the masala powders one by one: turmeric powder, red chili powder, garam masala powder, and the remaining salt. Combine well and continue to saute for 1 minute.
  5. Add 1 tablespoon of butter, chopped coriander leaves, and 1/2 cup water. Mix well.
  6. Saute the mixture for 1-2 minutes or until the mixture becomes semi-solid (almost dry). Turn off the heat. The spicy masala is now ready.
  7. Start making masala pav. Heat a griddle or flat pan over medium heat. Add 1 teaspoon of butter. Slice the pav bun horizontally through the middle and spread on the melted butter. Toast both sides of the pav (refer to photo below).
  8. Generously spread the spicy masala on one half of the pav bun. Top it with some chopped onions and chopped coriander leaves. Place the other half of the pav bun on top. Add a generous amount of masala on top and garnish with chopped onions and chopped coriander leaves.
  9. Gently press it with a spatula to make the pieces stick together so that you can hold it as a single unit.
  10. Make the rest of the masala pav in the same manner. Serve with 1 or 2 lemon wedges.
