Punjabi Summertime Beverage
Kachi lassi is a summertime beverage from the North Indian region of Punjab. It is a cooling and refreshing beverage prepared with milk, rose syrup, water and ice. In Punjabi, this drink is called chabeel.
Connection to Sikh Tradition
In the Sikh tradition, this drink is served in the peak summer months of May and June to commemorate the martyrdom of the fifth Sikh guru, Arjan Dev Ji. After Arjan Dev Ji refused to stop preaching the word of God, Mughal Emperor Jahangir sentenced him to death by torture. He was forced to sit on a burning-hot iron sheet while hot sand was poured on his body. After five days of this torture, he died.

Ingredients
- 2 tbsp rooh afza (rose syrup), or as needed
- 50 ml chilled doodh (milk), boiled and then cooled
- 250 ml chiiled water
- 3 to 4 ice cubes, or as needed
Instructions
- Place the ice cubes in a large mug and pour in the chilled milk.
- Top up with chilled water and add rooh afza (rose syrup).
- Stir until the ingredients combine well and serve.
