Recipes for Rhubarb Pie and Rhubarb Crumble

Two Rhubarb Recipes
In this article, I show you how to bake rhubarb pie with homemade shortcrust pastry. I have also included a recipe for rhubarb crumble. There are step-by-step instructions with plenty of photos and videos for these dessert recipes. There is also a video of my mother making this rhubarb tart. If you watch the video until the end, you will see some very funny outtakes of both of us messing around.
Rhubarb Pie With Shortcrust Pastry
- Prep time: 30 minutes
- Cook time: 1 hour
- Ready in: 1 hour 30 minutes
- Yield: Serves 8 people
Ingredients
- 12 oz/340 grams self-raising or all-purpose flour
- 8 oz/245 grams butter
- 4 oz/110 grams sugar
- 7 sticks rhubarb
Step 1: Make the Shortcrust Pastry
- Preheat your oven to 180 C / 350 F.
- Add the flour to the bowl.
- Add the butter into the flour and mix in well with your hands.
- Add water and mix with a knife.
- Cover a kitchen board with some flour and put the pastry mix on top of it.
- Cut in half and leave one piece aside.
Step 2: Make the Rhubarb Pie
- Prepare the baking tin or dish by rubbing some butter around the base of it.
- Cover a kitchen board with some flour and put the pastry mix on top of it.
- Add a sprinkling of flour on top and roll out to the size of your baking tin.
- Place the pastry into it and push down gently fixing it around the edges.
- Add the rhubarb pieces to the dish and move around evenly.
- Pour some sugar over this.
- Take the remainder of the pastry and roll out to fit the top of the pie.
- Cover the top and press it down where the two pieces meet to seal it all in.
- Place in the middle part of the oven for about 45 to 60 minutes until golden brown.
- Take the pie out of the oven and place on a safe surface.
- Add some butter to the top of the pastry and immediately sprinkle some sugar over it.
- Cut into slices and serve with either hot custard, ice cream or cream.
Rhubarb Crumble Recipe
Ingredients
- 6 oz/150 grams self-raising or all-purpose flour
- 2oz/50 grams butter
- 3 oz/75 grams sugar
Instructions
- Preheat the oven to 180 degrees C / 350 degrees F.
- Add the flour to a large bowl.
- Cut up the butter into small squares and add to the bowl.
- Mix the butter into the flour using your fingertips.
- When it is mixed together and looks like breadcrumbs add the sugar.
- Stir this until it is evenly distributed.
- Wash and cut the rhubarb into small pieces.
- Take your dish and add the rhubarb.
- Pour the crumble gently over the filling.
- Put in the highest part of the oven for about 30 to 40 minutes.

Loved rhubarb pie as a kid. My mom made them as did her mother. As an adult the rhubarb was mixed with fresh strawberries and the combination in a cobbler is delicious.
