Pancakes are a very popular breakfast food around the world. They're usually an on-the-go meal for busy people like me. As I checked my pantry today, I found out that I didn't have any pancake mix. Rather than going and getting some to satisfy my cravings, I decided to make my own version! So I started checking all my ingredients... and then I noticed I didn't have any baking powder. So I improvised and came up with this simple and affordable pancake recipe that doesn't use baking powder. I topped my pancakes with chocolate chips but you can also use chocolate syrup or other toppings. This is the simplest recipe on how to make pancakes without baking powder from scratch. Enjoy!

Ingredients

  • 1/2 cup all-purpose flour
  • 1/2 cup milk, liquid
  • 1 egg
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • butter, optional
  • chocolate chips, optional
  • oil, for cooking

Step-by-Step Procedure: Pancakes Without Baking Powder

Instructions

  1. Mix all of the dry ingredients together. Stir using a whisk to incorporate everything.
  2. Start adding the wet ingredients.
  3. Stir everything until there are no small lumps.
  4. Heat up the pan. Grease it using a small amount of oil.
  5. Spoon the batter into the pan using the ladle.
  6. Cook the pancake at least 2 minutes per side or until bubbles start to come out.

Tips and Techniques

  • Separate egg yolk from egg white. Beat the egg white before adding it to the rest of the ingredients to make a fluffier pancake.
  • Top pancake with butter and chocolate to balance the saltiness and sweetness of this breakfast dish.
  • May use either salted or unsalted butter.
  • Drizzle some pancake syrup on top.
  • Add other condiments such as chocolate syrup or whipped cream if preferred.

Answer: If you want to make your pancake fluffier, you need to beat the egg white until stiff peak before adding it to the yolk.

Answer: One famous fluffy pancake recipe is from Japan. All you need to do is whisk the egg until stiff peak is achieved then add it into the mixture. Using self-rising flour may also help.

Question: Can I replace the baking powder with bicarbonate of soda when making pancakes?

Answer: Yes using the ratio of 3 baking powder to 1 baking soda. Example: If the recipe calls for 3 teaspoon of baking powder, you may replace it with 1 teaspoon of baking soda.

Answer: Yes, you can add both into the mixture. In some recipes, butter is added into the pancake mixture as an oil alternative. Answer: In this recipe yes but you can omit it if you want. In desserts or even when eating fruits, sprinkling small amount of salt will highlight the sweetness of the food.

Question: Do we add sugar when making pancakes without baking powder?

Answer: Yes to give a little sweetness into it. You may opt not to add as well especially if you're counting your sugar intake for a day.

Question: How much butter are you supposed to use for these pancakes?

Answer: You can use butter in two ways. 1st as an alternative to oil when cooking the pancakes. At least 1 tbsp butter for this process. 2nd when you serve it. Pancakes are usually served with butter and syrup on top in restaurants. In this case, you can use as much amount of butter that you want.

Question: Does it mean i can use just the egg white without the egg yolk?

Answer: Yes, if you want to go healthy.

Question: If I don't separate egg yolk and egg white, will the pancake come out nicely?

Answer: Yes, still fluffy but not that fluffier if you will beat the egg white/s.

Question: Can I put peanut butter instead of blueberries on pancakes?

Answer: Yes, anything you like.

You may or you may not. For those weight watchers, they prefer to put egg whites only. I personally add both egg white and egg yolk whenever I'm making my pancake. In this case, just make sure to whisk the egg white until stiff peak and carefully add/fold beaten egg yolk into the said mixture.

If you will serve this for kids, they will surely enjoy it! You may also use choxolate syrup instead of the chocolate chips. Though I prefer the latter because some choco bits remained even I sprinkled it on top of my hot pancake.

You can also try other variation like wheat flour to make it healthier version. Then rather than chocolate chips, choose any kind of fruits. It will surely be delicious as well.
