How to Make Canned Sardines Lumpiang Shanghai

Lumpiang Shanghai is one of the most popular Filipino pulutan, or finger foods. The snack typically consists of a meat and vegetable filling inside a spring roll wrapper. This famous hot appetizer is often served with beer or other alcoholic beverages.
In this recipe, I will show you a version of lumpiang Shanghai that is made with canned sardines. This is a cheaper way to enjoy this delicious snack.

Ingredients
- 2 cans sardines, drained
- 1 cup malunggay or moringa leaves, chopped
- 1/2 cup carrots, minced
- 1 onion, minced
- 1 egg, beaten
- 1/2 inch ginger, grated
- 3 cloves garlic, minced
- 2 tablespoons cornstarch
- lumpia or spring roll wrapper
- salt, to taste
- pepper, to taste
- cooking oil, for sauteing and frying
Utensils
For Preparation:
- 2 medium bowls
- 1 large plate
- 1 small plate
- measuring cups
- measuring spoons
- chopping board
- knife
- fork
- spoon
For Cooking:
- fry pan
- tongs
- strainer or cake rack
- bowl
Instructions
- Heat oil in a pan. Saute the onion and garlic.
- Add in carrots and malunggay leaves. Mix in mashed sardines and cornstarch. Continue cooking.
- Once cooked, remove the pan from the heat and transfer the mixture to a bowl. Allow it to cool.
- Beat 1 egg and add it into the sardine mixture. Mix. Set aside.
- Lay lumpia wrapper on a plate. Scoop 1 1/2 to 2 tablespoons of the sardine filling.
- Line the mixture above the bottom of the wrapper, leaving at least 1 to 1 1/2 inches of space on each side.
- Fold the lumpia wrapper from the bottom to the center. Then fold the wrapper from both the left and right sides to the center. From there, start rolling it.
- Seal the top part of the wrapper with water.
- Repeat steps 6 to 8 with the remaining ingredients.
- Once done, set up the frying pan. Heat enough oil to deep-fry the lumpia.
- Fry each piece until golden brown. Drain excess oil.
- Serve with your favorite dip.

Tips and Techniques
- Serve with your favorite sauce.
- The type of canned sardines doesn't matter. You can use sardines in oil, sardines in tomato sauce, or spicy sardines.
- Add other vegetables if you want.
- Cook the filling first to get the best result.
- Replace cornstarch with similar products such as all-purpose flour, rice flour, etc.
