  • 1 large plate

For Cooking:

Ingredients

  • 300 grams sitaw (string beans), chopped
  • 200 grams pork, sliced
  • 2 cups coconut milk
  • 3 tablespoons shrimp paste
  • 3 cloves garlic, minced
  • 6 pieces green finger pepper
  • 3 medium eggplant, sliced (optional)
  • 1 medium onion, minced
  • 1 inch ginger, sliced
  • Cooking oil, for sauteing
  • Bird's eye chili, chopped (optional)

Instructions

  1. In a pan, saute the garlic, ginger, and onion.
  2. Add the pork slices. Cook until slightly brown. Pour in water to cook until almost tender.
  3. Add in green beans, green finger pepper, and shrimp paste.
  4. Pour in coconut milk. Let it simmer until the beans are tender.
  5. Season with salt and pepper. Top with chopped bird's eye chili before serving.

Tips and Techniques

  1. If you don't have access to fresh coconut, you can use powdered coconut milk.
  2. To make it spicier, increase the amount of green finger peppers and bird's eye chilies.
  3. Replace shrimp paste with fish sauce.
  4. Choose ground pork as an alternative of sliced pork.
  5. You can replace the pork with beef, chicken, or fish.
