How to Cook Chicken Gizzard Menudo
I am a chef on a luxury world cruise liner. I love to cook and write recipes that are inspired by foods from all over the world.
Menudo is a common Filipino stew that is traditionally made with pork, pork liver, vegetables, and tomato sauce. It is often served at family gatherings such as fiestas and birthdays.
Menudo can be prepared with other types of meat, as well, and in this recipe I used chicken gizzards. Part of the digestive tract of a chicken, the gizzard is considered to be a delicacy in many parts of Asia.

Ingredients
- 3 cups water
- 3/4 cup tomato sauce
- 400 grams chicken gizzards, diced
- 5 tablespoons diced potato
- 5 tablespoons diced carrot
- 4 tablespoons diced bell pepper
- 4 tablespoons raisins
- 4 tablespoons green peas
- 2 tablespoons minced onion
- 1 tablespoon minced garlic
- salt, to taste
- pepper, to taste
- cooking oil
- water, as needed
Utensils
For Preparation:
- 1 large plate
- 4 medium bowls
- measuring cups
- measuring spoons
- knife
- chopping board
For Cooking:
- pan
- cooking spoon
Instructions
- Heat the oil in a pan and saute the onion and garlic. Add chicken gizzards. Continue sautéing.
- Pour water into the pot. Season with salt and pepper. Continue cooking.
- Add the potatoes and carrots. Mix in the tomato sauce. Cook until tender.
- Once the potatoes and carrots are almost tender, add the green peas and raisins. Continue cooking.
- Serve with steamed rice.
Tips and Techniques
- For a sweeter menudo, use a sweet-style tomato sauce.
- For faster cooking, cut the gizzards and vegetables into small pieces.
- To adjust the consistency and spice level, adjust the amount of water and seasonings to your liking.
- Add hot sauce or chopped chilies to make a spicier dish.
