Delicious Homemade Spiral Raisin Danish

What could taste better than a delicate and flaky Danish pastry?

My family's favorite type of Danish contains raisins and cinnamon sugar, which is the recipe I'm featuring here. I made this as a Thanksgiving treat for my family, and they loved it!

I divided the dough into two portions and saved half for later. If you'd like to save some of the dough for future use, wrap it nice and tight with cling wrap and then store it in the freezer. When you're ready to make Danishes again, take out the dough, thaw it out, and then get ready to roll and shape.

By the way, in the Scandinavian countries of Denmark, Norway, and Sweden, the term for Danish pastry is wienerbrød (or wienerbröd), meaning "Viennese bread."

Yield: 12 pastries

Ingredients

  • Danish pastry dough (homemade or store-bought)
  • 2 tablespoons butter, melted
  • 1/2 tablespoon ground cinnamon
  • 2-3 tablespoons light brown sugar
  • 1/4 cup raisins (I used dark raisins, which were larger than normal raisins)
  • 1 whole egg mixed with 2 tablespoons water (egg wash)
  • Orange marmalade or any type of marmalade or jam for topping

Note: You can sprinkle more ground cinnamon and raisins, if you prefer.

Directions

  1. On a lightly floured surface, roll out the Danish dough into a 12-inch (30 cm) square.
  2. In a small bowl, mix the light brown sugar and ground cinnamon evenly. Set aside.
  3. Brush the dough with melted butter, sprinkle generously with cinnamon sugar, and then sprinkle the raisins on top.
  4. Roll up the dough tightly and slice it into 12 pieces. (I used a knife to cut the dough. However, you also can use a clean thread. It should cut cleanly and easily right through the dough.)
  5. Place the Danishes onto a prepared parchment-lined baking tray.
  6. To make sure the Danish is round, tuck each end of the spiral underneath.
  7. Cover the Danishes loosely with cling wrap or a tea towel and leave to rise on the counter for 90 minutes.
  8. Preheat the oven to 375°F. Brush the risen Danishes with egg wash and bake for 25 to 30 minutes or until a rich golden brown.
  9. Allow the Danishes to cool for 20 minutes on the baking tray before glazing.
  10. To glaze: Melt the orange marmalade or any type of fruit jam in a small saucepot over medium-low heat.
  11. Brush the orange marmalade or jam over each Danish, let sit for a few minutes, and then serve.
  12. Enjoy the warm Danish with coffee or tea.
