Fluffy Ham and Cheese Pancake Sandwich
I am a chef on a luxury world cruise liner. I love to cook and write recipes that are inspired by foods from all over the world.
This is a fun twist on the traditional ham and cheese sandwich. Instead of bread, I've used breakfast pancakes. It works surprisingly well! Try it today.
Ingredients
For the pancakes:
- 2 1/2 cups all-purpose flour
- 1 1/2 cups water
- 3/4 cup sugar
- 1/4 cup cooking oil
- 2 tablespoons baking powder
- 2 teaspoons vanilla extract
- 1 teaspoon salt
- 2 large eggs
- Butter or oil, for cooking
For the coleslaw:
- 1/4 medium cabbage, shredded
- 1 small carrot, shredded
- 1/2 small onion, chopped
- 1/2 cup mayonnaise
- Salt and pepper, to taste
Other:
- 3 slices sweet ham
- 12 slices cheese

For the pancakes:

For the coleslaw:
- 1 small plate
- 2 medium bowls

To assemble the sandwich:
- 1 large plate

- 2 pans
- turner or spatula
- ladle
- tongs

Instructions
Make the pancakes:
- In a bowl, beat eggs until a little bit fluffy.
- Add in water, cooking oil and vanilla extract. Mix.
- Dilute sugar and salt into the liquid mixture. Continue mixing until ingredients are dissolved. Set aside.
- In the same bowl, sift and combine all-purpose flour and baking powder. Whisk thoroughly. Set aside once done.
- Heat and grease pan with 1 tablespoon of butter or cooking oil.
- Scoop pancake mixture using 1/3 measuring cup. Pour mixture at the middle of the pan and just allow it to spread out.
- Cook the bottom side of the pancake until bubbles start to come out. Once done, flip it over. Cook the other side until golden brown in color.
Make the coleslaw:
- Prepare all the ingredients.
- Mix cabbage, carrots, onions and mayonnaise in a bowl.
- Season with salt and pepper.
Assemble the sandwich:
- Heat small amount of oil in a pan. Cook ham. Set aside.
- In a plate, lay a piece of pancake. Top with ham, cheese, coleslaw and another piece of pancake.
- Serve with your favorite drink.
Tips and Techniques
- Separate the egg yolk from egg white. Beat the egg white first until a little bit fluffy before adding the yolk.
- To make it creamier, use water rather than milk.
- Use butter for a nuttier taste.
- Cook over low heat for better results.
- Adjust the seasoning for the coleslaw.
- Replace coleslaw with the usual sandwich vegetables: lettuce, tomato, and cucumber.
