Chocolate Almond Cookies

These chocolate almond cookies are one of my absolute favorites. They're packed with almonds on the inside, covered with chocolate glaze on the outside, and garnished with almond nibs on top. What's not to like?

I have made these cookies many times with my sister for the Eid festival. They are one of our favorites to make because the kids love them so much!

For extra crunch, I roast both the whole almonds as well as the almond nibs in the oven for 10 minutes. This makes the cookies even more crunchy and delectable.

Ingredients

  • 50-60 whole almonds
  • 1 cup icing sugar
  • 250 grams salted butter, room temperature
  • 2 eggs yolk, room temperature
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 cup cornflour or cornstarch
  • 2 tablespoons rice flour
  • 1/2 cup ground cornflakes
  • 1 tablespoon vanilla essence
  • 1 packet semi-sweet chocolate for dipping
  • 1/2 cup almond nibs

Directions

  1. Roast the almonds on a pan in the oven for 10 minutes or until the oil has emerged on the skin. Set aside.
  2. Roast the almond nibs for 5-7 minutes. Set aside.
  3. In a medium-sized bowl, sieve the all-purpose flour, cornflour, baking powder, and rice flour.
  4. Combine the ground cornflakes into the flour mixture and whisk with a whisk. Set aside.
  5. In a mixing bowl, combine the icing sugar, butter, eggs yolk, and vanilla essence. At medium speed, mix these ingredients until fluffy by using a hand mixer or a stand mixer.
  6. Combine the flour mixture into the butter mixture. At medium speed, mix the mixture until it's well-combined.
  7. Use your hands to form a dough and let it rest for 10 minutes.
  8. Preheat the oven to 320°F.
  9. Use your hands form many small balls from the dough. Make an indentation in the center of each ball to place an almond.
  10. Once in place, roll the ball into an oval shape, making sure that no part of the almond is exposed.
  11. Set the cookies on a baking pan. Bake for 15 minutes.
  12. Transfer the cookies on a rack to cool completely.
  13. Make the chocolate glaze: Add some water to a medium saucepan or pot and bring to a very gentle simmer.
  14. Place a heat-safe bowl on top, but make sure the bottom is not touching the water.
  15. Add the chocolate chunks to the bowl and stir with a whisk. Continue to whisk until smooth and melted.
  16. Remove the bowl from heat.
  17. Use tongs to dip each cookie into the melted chocolate.
  18. Gently transfer the cookie into a paper cup.
  19. Garnish the top with the almond nibs.
  20. Repeat the process until all cookies are done.
